Chef Nino’s expertise is a blend of heritage, precision, and passion. Over the years, he has perfected the art of preparing roast suckling pig (cochinillo) a dish celebrated for its crisp skin and tender meat. Having prepared thousands of cochinillos, his mastery has become a culinary benchmark in authentic Spanish cooking.

A Taste of Spain: Cochinillo & Paella
In his upcoming Spanish Cuisine Cooking Class at UpSkillz Studio, Pasig, Chef Nino will guide participants through two iconic dishes: Cochinillo and Paella.
Students will learn the secrets behind achieving the perfect roast and crafting an authentic paella from developing bold flavors to mastering that golden socarrat (crispy rice crust).
This one-day class is designed for home cooks, aspiring chefs, and culinary enthusiasts who want to experience authentic Spanish cooking guided by a professional chef.

For more than seven years in the Philippines, Chef Nino has continued to enrich his culinary artistry by blending Mediterranean traditions with Filipino influences, creating a unique flavor identity that bridges cultures.
His impressive career includes a significant tenure at Barcino, one of the Philippines’ most recognized Spanish restaurants, where he refined his skills in Spanish gastronomy and menu innovation.
Currently, as Executive Chef at L'Épicerie, he curates menus inspired by French classics and Mediterranean techniques, emphasizing high-quality ingredients and precise execution.
